Chicken with Broccoli

Chicken with Broccoli
Ingredients
2 pcs boneless chicken - Sliced
1 tbsp corn flour
1 bunch brocolli - cut
Few pcs young corn - cut
1 carrot - cut
1 onion - cut
3 garlic - chopped
1/2" ginger - chopped

Sauce (Add together)
1 tsp corn flour
1 tbsp oyster sauce
1 tsp chicken stock granules
1 tsp freshly ground black pepper

Method
1. Rub chicken with corn flour, pepper and a pinch of salt. Heat about 2 tbsp oil and stir fry the chicken until brown. Removed and set aside
2. With the same oil sauté the chopped garlic and ginger until fragrant, add in broccoli, carrot and young corn, stir for about 3 minutes. Removed and placed it in the plate.
3. Heat another 1 tsp oil, sauté the onion and then add in sauce mixture. Stir for few second and then return the chicken into the wok. Mixed thoroughly and then removed and pour it on top of the cooked broccoli.
4. Served

Dried Sambal Prawn


Dried Sambal Prawn


Ingredients A
10 large prawns - clean and deveined
1 large onion - sliced
2 garlic - chopped
2 kafir leaves
1/2 tsp chicken stock granules or powder
1/2 tsp sugar
1/2 tsp turmeric powder
1 tsp dark soy sauce

Ingredients B
Chili Paste (sambal) - pound or blend
3 red chili
1 tsp roasted shrimp paste (belacan)
1/2 tsp anchovies
1 tbsp lime juice

Methods
1. Blend or pound the ingredients B to make a sambal (chili paste)
2. Add salt and turmeric powder to the prawns. Heat up about 1/2 cup of oil in a wok. Deep fry the prawn for about 1 - 2 minutes and then removed set a side.
3. Use the same oil, sauté the onion and garlic until brown. Add the chili paste. Stir until fragrant and then add kafir leaves and season with sugar, salt and soy sauce.
4. Return the prawn and stir for another 2 minutes Served with steam rice while it still hot.

Papaya Pickle (Jeruk Betik)

I plucked the papaya from the garden, its really a lot as I tried to save it from the squirrel.  A friend of mine suggested that I make pickle out of it. I had never make this before and yeah.. why not give it a try. It turns out really nice.. and now I'm sharing it with others. Cheers everyone!

Jeruk Betik

Ingredients
1 almost ripe papaya - Peeled and sliced
1 tbsp salt
1 cup vinegar
1 cup water
1 1/2 cup rock sugar
6 birds eye chili

Method
1. Peeled and cut the papaya about 1" thick. Wash and add with salt. Rub thoroughly and marinade for about 1 hour.
2. Add in water, vinegar and sugar in a small pot. Boil until it dissolved and leave to cool.
3. Drain the papaya and arrange it in the glass jar with the chili. Pour the rolled vinegar syrup and marinade again for another 4-5 hours.
4. Store in the fridge before served.







Kueh Talam Beras

Tepung Talam Beras


Ingredients A (Top Layer)
1 cup rice flour
1 tbsp tapioca flour
1 tbsp corn flour
2 cups coconut milk
1 tsp salt

Ingredients B (Bottom Layer)
3 cups coconut milk
1 cup rice flour
1 tbsp corn flour
1/2 cup pandan extract (from 10 leaves)
1/2 cup sugar
1/4 tsp lime betel mixed with water (kapur sireh) - optional

Method
1. Mixed all the ingredients B into a bowl and stir thoroughly until there is no lumps. (You can blend it to get smooth texture). At meantime pre-heat the steamer.
2. Stir on slow heat until its slightly thicken and then transfer to tray. and steam for about 15 minutes
3. Mixed all the ingredients B into a small pot and stir on slow heat for 5 minutes.
4. Scratch the green (bottom) layer and the pour the white (top) layer on top and steam for another 15 minutes or until its ready
5. Removed and allow to cool before served.

Kerabu Mee Hoon (Rice Vermicelli)

Kerabu Mee Hoon




Ingredients
1/2 pack of meehoon (rice vermicelli)
1/2 bowl fresh prawn (peeled and deveined)
2 onions - sliced thinly
2 garlic - chopped
1/2" ginger - thinly sliced
3 pcs kafir leaves - sliced thinly
1 lemongrass - sliced thinly
2 sprig kesum leaves - chopped
2 sprig mint leaves - chopped
1 ginger flower (kantan) - thinly sliced
1 tomato - sliced
1/2 cup roasted ground peanut - coarsely pounded

Chili Paste (blend all)
2 tbsp dried prawns - soaked with hot water and drain
5 pcs red chili
1 tsp roasted shrimp paste (belacan)
1 tbsp fish sauce
3 tbsp lime juice
1 tsp sugar

Methods
1. Boil water in a pot and blanched the mee hoon until cook. Drain and set aside
2. Boil prawn until cooked, removed and set aside. Fry the dried shrimp without oil and set aside
3. In a big bowl, add chili paste,with all other ingredients plus mee hoon and shrimp. Toss and mixed all the ingredients thoroughly.
5. Keep in the fridge. Served when its cold. Enjoy!!

Roasted Pumpkins

I bought a yellow pumpkin yesterday and I don't want to cook it as normal way... so I grilled it. Pumpkin is excellent in anyway you cook it. I love it this way...

Roasted Pumpkin

Ingredients
1 whole pumpkin - peeled and cut
3 tbsp extra virgin olive oil
Chopped parsley
2 clove garlic - crushed
Freshly ground blackpepper
Salt to taste
Methods
1. Rub the pumpkin with olive oil, chopped parsley, salt and blackpepper
2. Grill in the oven at 150 degree Celsius for about 10 minutes
3. Served


Grilled Chicken Breast


Ingredients
4 pcs chicken breast
2 cloves garlic - crushed
1 tsp garlic powder
1 tsp ginger powder
1 tsp paprika (chili) powder
2 tbsp olive oil
Freshly ground black pepper
Rosemary leaves

Method
1. Marinade chicken with olive oil, paprika powder, garlic and ginger powder. Season with  freshly ground black pepper and salt.
2. Heat about 1 tbsp oil in a frying pan, fry the chicken for few minutes before transfer to the baking tray. Add the crushed garlic and rosemary leaves. Bake in the preheat oven at 170 degree Celcius for about 20 minutes or until its ready
3. Served with mashed potatoes and brown gravy

Easy Chocolate Cake with Cream Cheese Frosting


Easy Chocolate Cake with Frosting

Ingredients A
1 3/4 cups sugar
1 3/4 cup Self raising flour
3/4 cup cocoa powder
1 tsp baking powder
1 tsp baking soda

Ingredients B
2 eggs
1 cup milk
1/2 cup vegetable oil
1 cup hot water
2 tsp vanilla

Frosting cream
8 oz cream cheese (soften)
100g soften unsalted butter
1/2 cup icing sugar (can add more, to your desire)

Method
1. Preheat oven to 180 degré Celsius
2. In large bowl, add all ingredient A and stir until together
3. Add egg, mils, oil and vanilla. Using the electric mixer mixed for about 2-3minutes. And the add in hot water. Continues stirs
4, Grease the baking tray and pour the mixture in it. Bake for about 40 minutes or until it cooked. Removed and allow to cool
5. Beat butter and sugar until fluffy and then add cream cheese. Continue beat until soft and spread evenly on the cake and decorate with cherry etc


Meat Ball with Butter Prawn Cereals

I have some left over meat balls, not wanting to waste it.. plus I have the cereal which I bought few weeks ago... so I created this simple recipe.  Quick and delicious, I'm sure many of you would love to try it. So Happy cooking Guys!!


Meatballs with Butter Cereals


Ingredients
300gm meat ball
1/2 cup butter prawn cereals  (sold in the market)
1 tbsp butter
2 birds eye chili - cut
2 garlic - chopped
1 stalk curry leaves
1 tbsp butter

Methods.
1. Heat oil and fry the meat balls until cooked. Set aside
2. Clean the wok, and melt 1 tbsp butter. Sauté garlic, chili and curry leaves until brown.
3. Add in meat balls, season with salt and pepper. Finally add in butter prawn cereals, stir thoroughly
4. Removed and served with chinese fried rice or steam rice

Fettucini with Chicken and Beef

This is an excellent dish.. creamy and yummy. For today, just forget about your diet. Don't blame me.. this is really tasty... Or just  step on the treadmill fore an hour after you finished this meal... Enjoy first!!
Fettucini with chicken and beef
Ingredients
1/2 packet of Fettuccine (8-10 oz)
1 pc boneless chicken- Thinly sliced
Few pieces thin sliced beef
1 tsp garlic powder
1 tsp ginger powder
1 tsp paprika
4 tbsp butter
1 tomato - cut
1 cup heavy cream
1 cup grated parmeson cheese
Salt and pepper

Method
1. In a boiling water, cooked Fettuccine until it's ready. Don't forget to add salt. Drain and set aside
2. Cut the chicken and beef into thin slice and then season with garlic & ginger powder, paprika, salt and pepper. Leave it for about 15 minutes.
3. Melt butter in a frying pan, cook the chicken on both side until, it turns brown. Removed and cut into small pieces
4. Using the same left over oil in the pan, add in the cream. Season with salt and pepper and cook for about 5 minutes or until it thicken
6. Add in the chicken, beef and tomato, followed with the fettuccine. Mixed it well
7. Served and enjoy your meal
