TOM YUM FRIED RICE




Ingredients
1 bowl cold rice
1 tsp tom yum paste
1 tsp dried chili paste
1 large onion - sliced
2 garlic - chopped
4 pcs prawn - diced
1 tsp light soya sauce
2 tsp fish sauce
1 tsp oyster sauce
1 lemon grass (just the white) - chopped
2 kafir leaves - finely sliced
1 tsp chicken stock (powder)
Mixed vegetables (carrot/geen peas/corns etc)

Preparation
1. Heat about 1 tbsp oil, sauté until brown and then add onion and prawn. stirs
2. Add tom yum paste, dried chili paste and mixed vegetables.
3. Add in the other ingredients and rice. Stir for about 3 minutes.
4. Garnished with egg loss or green onion and served.

Fried Masala Chicken Briyani / Bryani Ayam Goreng Masala

As usual … Its my way and my style of cooking




Ingredients
For rice
2 cups Basmathi rice - soak for 30 minutes
2 pcs bay leaves
3 pcs anis star
2 pcs cinnamon stick
3 pcs cardamom
3 pcs cloves
1 tbsp oil or ghee
Salt to taste

Instructions:
1. After 30 minutes; Strain the rice and set aside
2. Add water into the pot; add in all other ingredients and bring to boil.
3. Add the rice; at cook for about 20 minute or until its 70% cooked.
4. Drain the rice; set aside

for Fried Chicken
6 pcs Chicken thigh  - (or any parts-about 1 kg)
1 tsp Briyani masala (or garam masala)
1 tsp chili powder
1/4 tsp turmeric powder
1 tbsp ginger garlic paste (1" ginger + 4 pcs garlic)
 Salt to taste

Instructions:
1. Add all the ingredients and marinade for about 30 minutes
2. Deep fry until its 70% cooked. set aside

Bryani Rice ingredients
Ingredients
2 Large onion - Chopped
1 bunch mint leaves - chopped
1 bunch coriander leaves - chopped
1 cup plain yogurt
2 tomato - chopped

(A)
1 cinnamon stick
2 anis star
2 cardamom
2 cloves

(B)
1 tsp briyani masala
1 tsp coriander poder
1 tsp chili powder
1/2 tsp turmeric powder

( C)
1 tbsp lime juice (or orange juice)
A pinch of Saffron - soak with 2 tbsp hot water
chopped coriander/ mint leaves
Fried onion
Salt 
Chicken stock (optional)

Preparation
1. Heat 2 tbsp oil in a pot, add in items (A); followed by chopped onion and green chili. Stir until fragrance and then add in item (B); continue stirs.

2. Add coriander & mint leaves (leave some for garnishing) ; tomato, yogurt; lime juice and 1/2 cup of water. Season with salt and chicken stock granules

3. Add the fried chicken; slowly stir it and then spread the chicken evenly.  Top up with rice. 

4. Garnish with chopped mint and coriander, fried onion. Sprinkle with saffron. You can add raisin and cashew nuts if you like. Cover it tightly and let it cook with slow heat for another 30 minutes or until its ready. Do not stir as this will break the rice.

5. Bryani is ready to be served




Bahasa Melayu

Bryani Ayam Goreng Masala

Bahan2 utk nasi (di masak sehingga ¾ masak)
2 cawan Beras Basmathi – direndam selama 30 min
2 helai daun salam
Rempah 4 jenis (kayu manis, cengkih, pelaga & bunga lawang)
1 sudu ghee
Garam secukup rasa

(Bila hampir masak; angkat dan toskan)

Bahan untuk ayam goreng
1 kg Ayam – di potong
1 sudu makan garam masala
1 sd makan serbuk cili
¼ sd teh serbuk kunyit
1 sd makan halia/ bwg putih yg di tumbuk
Garam & perasa

(Gaul semua bahan dan goring ayam hingga 80% masak; angkat dan asingkan)

Bahan tumis
3 bunga lawang
3 buah pelaga
2 kayu manis
3  bunga cengkih
3 biji timato – di potong dadu
2 biji bawang besar – di cincang
4-5 biji cili padi

1 sd kecil serbuk cili
1 sd kecil serbuk ketumbar
1 sd makan garam masala

1 cawan dauh pudina yg di cincang
1 cawan daun ketumbar yg dicincang
1 cawan yogurt
1 tsp Lemon juice
garam secukup rasa
Saffron (direndam dengan sedikit air panas)
Bawang goring

Caranya
1. Panaskan minyak, tumis bawang bersama perencah 4 jenis hingga naik bau. 

2. Masukkan serbuk cili, serbuk ketumbar, garam masala; tomato , cili padi,  yogurt, air limau serta 
    daun ketumbar dan pudina yg telah di cincang tadi. Gaul rata dan masukkan garam & serbuk perasa.

3.  Ratakan ayam (seeloknya jgn biarkan bertindan. Masukkan nasi yg separuh masak keatasnya. 

4. Taburkan bawang goring, daun pudina, daun ketumbar, saffron dan sedikit ghee. Tutup rapat dan 
     masakkan selama 15 minit dgn api yang perlahan

5. Selamat mencuba



** Boleh ditambah dgn kacang gajus, kismis.

Nasi Goreng Pattaya Pedas






Ingredients - for fried rice
1 cup cooked rice
1 tsp chili paste
1 tbsp minced chicken
2 onion - chopped
2 garlic - chopped 
1 egg
1 tbsp mixed vegetables
1 tsp thin soy sauce
1/2 tsp chicken stock granules
Salt to taste (if necessary)

Omelet for wrapping
3 eggs
Salt & pepper to taste

Method
1. Heat about 1 tbsp oil, sauté the garlic and onion until fragrant. Add in the chili paste and chicken, mixed vegetables; continue stir until the chicken cooked.
2. Season with salt, soy, chicken stock and then break the egg. Stirs and finally add in the cooked rice. Mixed thoroughly. Removed and set aside
3. Make and omelet, when it almost done , scoop fried rice and put it in the middle of the omelet. Then wrap it neatly with the omelet
4. Turn over the Pattaya fried rice straight on to the plate and served.

Pulut Inti


Pulut Inti


Ingredients
2 cups glutinoues rice - soaked with water for about 2-3 hours
1/2 cup thick coconut milk
1 tsp salt

Filling
1 cup grated coconut
1/4 cup water
1/2 cup palm sugar
2 tbsp white sugar (depending on your taste)
1tsp tapioca flour
1tsp plain flour
1 pandan leaf - tie into knot


Methods
1.  Prepare the steamer and steam the glutinous rice until half cooked (about 30 minutes). Removed and stir into the coconut milk (mixed with salt) thoroughly and steam again for another 30 minutes or until cooked. Removed and allow to cool.
2. In a sauce pan cook the palm sugar,white sugar, water and pandan leaf until dissolve. Remove and sieve the mixture using the strainer.
3. Return to sauce pan and then add the grated coconut, tapioca flour and plain flour; stir thoroughly. Cook for another 5 minutes and then removed.
4. You can wrap using the banana leaf or just served on the plate. Enjoy!

Yellow Glutinous Rice / Pulut Kuning

Pulut Kuning

Ingredients
3 cups glutinous rice
2 tamarind peeled
2 tsp turmeric powder
2 cups coconut milk
4-5 pandan leaves
1 tsp salt

Method
1. Soaked glutinous rice with water, turmeric poder and tamarind peeled, at least 6-8 hours (preferably overnight). When t done, removed the tamarind peel and drain the water.
2. At the meantime, boil the water in the steamer.
3. Cut the pandan leaves into 2 and arrange in the steamer tray to cover the holes. Put the glutinous in it and steam it for about 8-10 minutes.
4. Add salt to the coconut milk, stir and set a side
5. Reduced the heat and transfer it to a bowl. Add the coconut milk bit by bit and the put it back in the steamer and steam again until it cook.
6. Removed and allow to cool. Serve with beef/ chicken rendang.

Nasi Dagang






Ingredients
4 cups fragrant rice
2 cups coconut milk
4 pcs garlic - sliced
1/2 " ginger - sliced an julienne
1 tsp fenugreek
1/2 tsp sugar
1tsp salt

Methods
1. Wash and soak rice at least about 4-5 hours
2. Use 1/4 cup of coconut milk and add with 1/4 cups of water. Keep the balance of coconut milk
3. Cook the balance of coconut milk with onion, fenugreek, salt and sugar. About 5 mints. Removed and set aside
4. Steam rice for about 8 minutes. Removed and add the uncooked coconut milk. Mixed well and steam it again
5. Once the rice is cooked, remove and add the cooked coconut milk and steam again
6. Once its ready, you may served it with fish or chicken curry.

Garlic Fried Rice

This is one of my favorite Japanese food, it's so easy to make. If you don't have time or not enough stuff in the fridge, why not cook this. Simple and yet tasty





Ingredients
2 cups cooked rice (cold)
2 eggs - lightly beaten
3 garlic - chopped
2 tbsp kikamon soy sauce
1 tbsp teriyaki sauce
1 stalk spring onion - sliced
1 tbsp butter
1 tsp chicken stock granules
1/2 tsp ground black pepper
2 tbsp cooking oil

Method
1. Heat oil in a wok, stir fry garlic until brown. Remove and set aside
2. Use the same oil, add eggs and stirs. Followed by rice and teriyaki and soy sauce. Stir for few minutes.
3. Add black pepper, butter, chicken stock, fried garlic and spring onion. Mixed well and dish out
4. Served while still hot.

Claypot Chicken Rice

This one of the popular Chinese cuisine in the Region. My family and I likes it a lot. I search for the recipes and with combination with few others plus my own way of cooking, it's turns out really amazing.






Ingredients

Chicken Meat
1 boneless chicken breast (250g) - cut
1 tbsp corn flour
2 tbsp sesame oil
2 tbsp rice wine ( can replaced with Apple cider)
1 tsp ground black pepper
A pinch of salt or to taste

## Add all the ingredient with chicken and marinade for 1 hour

For the Rice
2 cups (300g) Rice - wash and drained
1/2 cups chicken broil
1 cup water
2" ginger - pounded
4 cloves garlic - pounded
4 -5 pcs dried mushroom - soaked and sliced
3 tbsp light sot sauce
2 tbsp sesame oil
1 bunch Sawi (Pak Choy) or any green leaf vegetables - cut
1 tbsp dark soy sauce

Method
1. Heat 2 tbsp oil in a wok, fry the garlic and ginger until brown
2. Add marinade chicken and mushroom, stirs for few minutes
3. Add in rice and water, stirs. Season with light soy sauce and sesame oil. Keep stirring for 2-3 min
4. At meantime, heat up the clay pot with medium heat
5. Transfer the rice into the clay pot and add the water. Cover the pot and cooked with slow fire. Stirs occasionally 
6. Add the pak choy and sprinkle with dark soy sauce and then cover it back.
7. Served while its still hot

Belacan Fried Rice







Ingredients
2 cups Cooked rice (cold)
2 garlic - chopped
2 strands long beans - cut
1 tbsp dried shrimps
1 eggs - lightly beaten
1 tsp light soy sauce
1/2 tsp chicken stock granules/ powder

Chili Paste (blend/pound)
3-4 green birds eye chili
1 tsp belacan
1 tbsp dried shrimp

Method
1.  Beat egg with a bit of salt, make an thin omelet. Removed and slice thinly. Set aside
2. Deep fried dried shrimps until crispy. Set aside
3. Heat 1 tbsp oil, sauté garlic until fragrant, add chili paste. stirs
4. Season with soy sauce and chicken stock, add long beans followed by rice and omelet. Mixed well
5. Served with omelette and cut tomato.

Sweet Potatoes & Corn Fritters





Ingredients
1 large potato - peeled and grated
1 cup corn kennels
2 eggs - lightly beaten
1/4 cup breadcrumbs
2 stalk spring onions - chopped
1 tsp garam masala
Oil for frying

Methods
1. Drain the grated potato, slowly squeeze the excess liquid (use paper towel)
2. Combine potato, corn, eggs, breadcrumbs, spring onion and bread crumbs. Mixed well
3. Heat oil in a frying pan and deep fry the fritter until golden brown.
4. Served with dipping sauce

Thai Style Corn Fritters (cucur jagung)




Ingredients
2 cobs sweet corn
1 stalk spring onions - finely chopped
2 tblsp finely chopped corriander stems or (celery)
2 cloves garlic - chopped
1 tblsp fresh green peppercorn
2 tblsp cornflour (all purpose flour)
1 tblsp soft brown sugar
2 eggs - lighly beaten
1 tblsp fish sauce (soy sauce)
3 tblsp butter
Oil for frying


Methods
1. Peel or sliced corn kennel from the cobs
2. Combine corn with all other ingredients. Mixed well
3. Heat oil in a frying pan. Scoop the mixture into the pan and cook until brown. Turn the pancake to cook on the other sides.
4. Served with Thai Chilli sauce

Tomato Rice




Ingredients
3 cups rice - washed and drain
3 cups water
2 tblsp ghee
1tsp tomato puree
1 tsp chicken stock
1 tblsp evaporated milk
1 tblsp condensed milk
2 pcs pandan leaves- tie into knot
Few stalks mint leaves
Salt to taste

Items A
3 small onions - sliced
2 garlic
1 stick cinnamon
2 star anis
3 pcs cradamom cloves

Items B - Pounded
1 tsp cumin seeds
1 tsp fennel seeds
2 garlic
1/2" ginger

Methods
1. Melt ghee with1 tblsp of cooking oil. Saute' items A until brown.


2. Put in pandan leaves, items B & tomato puree. Stirs until fragrant
3. Add in water, rice, milk, chicken stock & salt to taste. Cook for about 10 mins with slow heat
4. When rice is cooked, place few pricks mint and cover the pot again. Remove from heat
5. Served with Ayam Masak Merah or Chicken Rendang (see my previous recipes)

Beef Fried Rice


Ingredients
Few pcs beef fillet
2 tblsp dark soy sauce
1 tsp pepper
1/2" garlic - sliced
2 garlic - chopped
1 big onion - cubed
2 cups of cooked rice (cold)
1 tsp chicken stock powder
1 tsp fish sauce
2 tblsp frozen mixed vegetables
1 stalk of spring onions - cut
Salt to taste

Methods
1. Season beef with dark soy sauce and pepper
2. Heat 2 tblsp of oil in a wok, sautee the garlic and onion until fragrant, followed by ginger
3. Add in beef, stir fry about 2 mins. Combine with salt, fish sauce, frozen mixed vege & soy sauce
4. Add rice and mixed well.
5. Garnished with spring onions & served

Nasi Padprik (Thai)








Ingredients
1/2 bowl chicken - cut into small pieces
1 big onion    - sliced
2 garlic          - pound
1/2 " ginger   - pound
1 tblsp chili paste
1 carrot          )
Long beans    ) cut into small pieces
Cauliflower   )
Spring onion )

1 red chili  - sliced
1 tblsp light soy sos
1 tblsp dark soy sos
1 tsp chicken stock (powder)
1 tsp pepper
1/4 tsp lime juice
1 tblsp corn starch (mixed with water)
salt to taste
2 tblsp oil

Preparations
1. Heat oil in the wok. Saute onion, garlic and ginger until brown and then add chilli paste - stir fry
2. Add the chicken meat, prawn and squid with soy sauce, cook for few mins
3. Add vegetables, other ingredients followed by corn starch
4. Served with white rice

Pineapple Fried Rice




Ingredient
2 bowl cooked rice 
3-4 pcs fresh prawn - peel and cut into
2 2 tblsp frozen mixed vegetable



1 big onion - chopped
2 garlic - chopped
1 sliced of pineapple - cubed
1 tblsp chili paste
1 egg - beat lightly 
1 tsp olive oil
1 tsp pepper
1 tblsp light soya sauce

Preparation
1) Heat up 2 tblsp oil and stir fry chopped onion, garlic and chili to fragrant.
2) Add prawns, pineapple and mixed vege, stir well
3) Add in dried prawn, eggs and pineapple.
4) Mixed with soya sauce, salt, pepper and followed by rice.
5) Sprinkle with fried shallot and served. 


Note:
Use big pineapple ( cut into half). Do not peeled. Slowly remove the centre to make it a hole. Use the cut pineapple for the ingredient and Served the fried rice in the pineapple. (As per the image)

Fried Riced with Salted Fish




Ingredients
1 pcs of salted fish fillet - soaked with water
1 bowl of cooked rice (cold)
1 big onion - cubed
1 red chilli or chilli padi - chopped
3 cloves garlic - chopped
1 tblsp dark soy sauce
1 tsp fish oil
1 tsp chicken stock powder
1/4 cup beansprout (optional) / Frozen Mixed vege
1 stalk spring onions - cut
Cooking oil


Methods
1. Rinse the salted fish, pat dry and sliced thinly. Deep fry until crispy, set aside
2. Clean the wok, and add 2 tblsp of oil. Sautee with garlic until brown
3. Add chilli, chicken stock, soy sauce, fish sauce and rice. Mix well
4. Stir in the fried salted fish, beansorut and spring onions.
5. Served immediately

Thai Fried Rice








Ingredients:
2 bowl cooked rice
3-4 pcs prawn
2 tblsp bowl minced chicken
2 onion.       )
2 garlic.       ) chopped
1/4" ginger. )
3 tblsp mixed vege or long beans
1 carrot - grated
1 lemon grass - sliced thinly
1/2" galangal -chopped
2 tblsp Tom Yum paste
1 tblsp chili paste
2 kafir leaves - sliced thin
1 tsp soya sauce
1 tsp Pepper

Preparation:
1) Heat wok and add cooking oil. Stir fry the onion, garlic & ginger
2) Add chicken and prawn until cooked
3) Add chili and tom yum paste, stir until fragrant
4) Put in vegetables, kafir leaves, lemon grass, light soya sauce and pepper
5) Mixed with rice and stir well
6) Served while it still hot

Pattaya Fried Rice





Ingredients:
1 bowl of rice
2 tblsp frozen mixed vegetable or green peas
2 - 3 pcs prawn - cut into small pieces
Small piece of boneless chicken meat - cubed into small pieces
1 tblsp tomato sos
1 tsp light soy sos
1 tsp fish sos
1 tsp chicken stock (powder)
2 garlic               )
1 small onion     )  chopped
1-2 chilli padi    )
2 eggs
Pepper and salt to taste
Oil

Methods
1. Heat frying pan with oil, saute chopped onion, garlic and cilli padi till fragrant
2. Add prawn and chicken, stir fry until cooked
3. Add mixed vege (or peas) tomato, soy sos, fish sos, chicken stock and salt if necessary
4. Combine rice into wok and stir fry for few minutes
5. Put fried rice into a small bowl. Pressed slowly and keep aside
6. Clean the frying pan and then add 1tblsp cooking oil
7. At the meantime, beat eggs with a dash of pepper and salt.
8. Once it's hot, put in the eggs and spread it thinly. Just like an ommelet and let be for few seconds
9. Put in a bowl of the fried rice at the center of the omellet and wrap up the 4 edges
10. Take a plate and put it inside the pan & flip it over ,
11. Garnish and served

Fried Rice - Chinese Style







Ingredient
1 bowl cooked rice
1 tblsp butter
1 tsp cooking oil
3 tblsp fozen mixed vegetables
2 onion - chopped
1 garlic - chopped
1 red chili (optional)
1 egg
1 tsp chicken stock (powder)
1 tsp light soy sauce
A dashed of pepper
Salt to taste

Preparation
1. Melt butter and combine with oil in a wok. Add onion and garlic till fragrant
2. Break the egg into the wok and stir. Add mixed vegetable & chilli, cook for about 2 mins.
3. Add soy sauce, salt (if needed), pepper and finally add rice and stir well.
4. Served while it still hot





Note: If you like more ingredient, you can add minced chicken or prawn. My family prefer its simple

Nasi Goreng Kampung






Ingredients A
1 bowl cooked rice
1 onion - sliced 
1 garlic - sliced
3 pcs long beans - cut into small pieces
4-5 pcs fresh prawn (chicken) 
1 tsp chicken stock
1 tsp anchovies - fried till crispy
1 pc of salted fish(kurau). - fried and cut into small pieces
1 tblsp fish sauce 1 tblsp light soya sauce Fried anchovies (optional)
1 egg - fried 

Ingredient B - (pound to make chili paste)

4 chili padi ( birds eye chili).                
1 small onion 1 garlic.       
1 tsp roasted Belacan (shrimp paste)
1 tsp lime juice

Preparation

1) Heat up wok and add 1 tblsp cooking oil. Add sliced onion and garlic
2) Add prawn, sauté for few second and then add chili paste, stir fry for another 1 minutes
3) Add long beans, prawn (chicken) and anchovies stock, soya sauce and fish sauce.
4) Add cooked rice, mixed well with fried anchovies and salted fish
5) Garnished with cut red chilli and spring onions
