Simple Pad Thai Noodles

Another simple dish for the family..



Ingredients

1/2 pack Thai rice noodles
1 pcs boneless chicken - sliced
1 cup bean sprout (optional)
1 carrot - sliced
2-3 cloves garlic - chopped
1 egg
2 tbsp fish sauce
1/2 tsp tamarind paste
1/2 tsp lime juice
1 tbsp palm sugar
1 tsp chili paste (depending on your taste)
1 tbsp peanut - (fried and pounded)
Chinese chives - optional

For Garnishing
 Coriander leaves
1 boiled egg

Preparation
1. Soak noodles until soft and set aside.

2. Heat oil in a wok, and sauté garlic until fragrance. Add in the chicken, stir fry for about 5 minutes and then set aside.

3. Break 1 egg, into the wok and add chili, continue stir; then add in the chicken and peanut. Season with fish oil, sugar lime juice.

4. Add noodles when its about to cook add in the bean sprout, carrot and chives. Stir fry until cooked

5. Garnished with coriander leave and boiled egg.




    Homemade Chicken Pizza


    pizza .. Anyone??? ..





    Ingredients
    For Pizza Base
    2 cups all purpose flour
    1 packet instant yeast
    3/4 cup warm water
    1 tsp sugar
    3/4 tsp salt
    3 tbsp olive oil

    For Topping
    1 pc chicken breast - diced
    1 can pineapple - diced
    4 pcs mushroom - slice
    4-5 pcs cherry tomato - cut into 2
    1 red capsicum - diced
    1 large yellow onion
    1 packet Mozzarella cheese

    3 tbsp tomato sauce ) combine
    1 tbsp BBQ sauce   ) into a small bowl

    Salt, pepper and paprika powder

    Preparation:

    1. Add instant yeast into the warm water. Allow to rest for about 5 minutes

    2. Combine flour, oil, sugar , yeast and salt in a bowl. Knead until it becomes dough; add more flour if it is too sticky.

    3. Cover the bowl with towel or plastic wrap. Let it rest until it double the size (about 1 hour)

    4. Once its ready, punch the dough and start roll it and place in the baking tray.

    5. Pre-heat oven to 180 degree C. Bake this base for about 10 minutes, until it half cooked. Removed and add the topping and bake again until its ready.

    For Topping
    1. Heat up 1 tbsp oil, sauté garlic until fragrance and then add in the chicken. Season with pepper, salt and paprika. Set aside

    2. Glaze the half cooked pizza base with tomato and BBQ sauce. Top up with chicken, tomato, capsicum, pineapple and onion. Top up with cheese evenly

    3, Bake until its turn brown for about 15 minutes.

    Spicy Grilled vegetables with Macaroni




    Ingredients
    1 cup cooked macaroni
    1 Zucchini 
    2 tomatoes
    1/4 yellow pumpkin
    1 carrot
    Few pieces button mushroom
    1 large onion - cut
    4 cloves garlic - crushed
    1 tbsp chopped Parsley
    1 tsp paprika (or chili powder)
    1 tsp Italian herbs
    2 tbsp olive oil
    1 tsp freshly ground black pepper
    Salt to taste

    Method
    1. Cut all the vegetables and mixed with olive oil, Italian herbs, parsley, garlic and onion.
    2. Bake for about 20 minutes in the pre heat oven at 150 degrees
    3. Place the cooked macaroni in a plate and then top up with the grilled vegetables.
    4. And served.



    Easy Baked Pasta Cheese







    Ingredients A
    2 cups cooked macaroni 
    1/4 cup butter,
    1/2 tsp salt
    1/4 cup flour
    4 cups milk
    1 cup Shredded Cheddar cheese

    Ingredients B 
    1/4 melted butter
    2 tbsp Breadcrumbs

    Method
    1. Preheat oven at 180 degrees C
    2. Boil macaroni until cooked. Drained and set aside
    3. In a sauce pan add in 1/4 cup of butter, flour, milk, salt and cheddar cheese. Cook until thicken. Add macaroni and stir until evenly coated.
    4. Pour the mixture into the baking tray and sprinkle with melted butter mixed with breadcrumbs.
    5. Bake for about 40 minutes or until it turns brown.

    Fried Mixed Veg with Spaghetti



    Ingredients
    1 cup cooked spaghetti
    1 red chili - sliced
    1 capsicum - cut
    3 garlic - chopped
    2 slices ginger
    1/2 bunch broccoli
    few pieces fresh prawn
    1 slice boneless chicken - cut
    1 carrot - cut ( or any other vegetables according to your desire)
    1 tbsp butter
    2 tbsp heavy creme
    Salt/ pepper/ chicken stock granules etc (to your taste)


     Method
    1. Melt butter in a sauce pan, and grill the chicken until brown, set aside. Do the same thing for the prawn.
    2. Clean the wok, and add 1 tbsp cooking oil, saute the garlic and ginger until brown. Add in chili and capsicum. Season with salt, pepper and chicken stock, Add spaghetti and continue stirs.
    3. Return the prawn and chicken and add in the heavy creme. Stir well and served.

    Kerabu Mee Hoon (Rice Vermicelli)

    Kerabu Mee Hoon




    Ingredients
    1/2 pack of meehoon (rice vermicelli)
    1/2 bowl fresh prawn (peeled and deveined)
    2 onions - sliced thinly
    2 garlic - chopped
    1/2" ginger - thinly sliced
    3 pcs kafir leaves - sliced thinly
    1 lemongrass - sliced thinly
    2 sprig kesum leaves - chopped
    2 sprig mint leaves - chopped
    1 ginger flower (kantan) - thinly sliced
    1 tomato - sliced
    1/2 cup roasted ground peanut - coarsely pounded

    Chili Paste (blend all)
    2 tbsp dried prawns - soaked with hot water and drain
    5 pcs red chili
    1 tsp roasted shrimp paste (belacan)
    1 tbsp fish sauce
    3 tbsp lime juice
    1 tsp sugar

    Methods
    1. Boil water in a pot and blanched the mee hoon until cook. Drain and set aside
    2. Boil prawn until cooked, removed and set aside. Fry the dried shrimp without oil and set aside
    3. In a big bowl, add chili paste,with all other ingredients plus mee hoon and shrimp. Toss and mixed all the ingredients thoroughly.
    5. Keep in the fridge. Served when its cold. Enjoy!!

    Fettucini with Chicken and Beef

    This is an excellent dish.. creamy and yummy. For today, just forget about your diet. Don't blame me.. this is really tasty... Or just  step on the treadmill fore an hour after you finished this meal... Enjoy first!!
    Fettucini with chicken and beef
    Ingredients
    1/2 packet of Fettuccine (8-10 oz)
    1 pc boneless chicken- Thinly sliced
    Few pieces thin sliced beef
    1 tsp garlic powder
    1 tsp ginger powder
    1 tsp paprika
    4 tbsp butter
    1 tomato - cut
    1 cup heavy cream
    1 cup grated parmeson cheese
    Salt and pepper

    Method
    1. In a boiling water, cooked Fettuccine until it's ready. Don't forget to add salt. Drain and set aside
    2. Cut the chicken and beef into thin slice and then season with garlic & ginger powder, paprika, salt and pepper. Leave it for about 15 minutes.
    3. Melt butter in a frying pan, cook the chicken on both side until, it turns brown. Removed and cut into small pieces
    4. Using the same left over oil in the pan, add in the cream. Season with salt and pepper and cook for about 5 minutes or until it thicken
    6. Add in the chicken, beef and tomato, followed with the fettuccine. Mixed it well
    7. Served and enjoy your meal

    Fusilli Garlic Butter Prawn

    Very simple !!!
    Fusilli Garlic Butter Prawn

    Ingredients
    1 cup fusilli - boiled
    1 tbsp olive oil
    salt to taste

    1 cup fresh prawn - peeled & deveined
    3 cloves garlic - chopped
    1 handful fresh parsley - chopped
    2 tbsp heavy cream
    Cooking oil
    1 tsp flavored chili powder (optional)
    Salt to taste


    Method
    1. Boil water with olive oil and salt. Cooked pasta until its ready. Drain and set aside
    2. Heat about 2 tbsp of cooking oil, add in prawn, stir fry for about 2 minutes and removed
    3. With the same left over oil, add in garlic and parsley. Sauté until fragrant and then return the prawn into the wok. Cook for about 3 - 4 minutes
    4. Add in cooked fusilli and sprinkle with flavored chili and salt. Add cream and mixed well.
    5. Removed from the heat and served..




    Spaghetti Fritatta

    A simple and easy way to cook the left over spaghetti


    Ingredients
    2 cups cooked spaghetti
    1 zucchini - diced
    few slices beef bacon- chopped
    1/2 cup diced mozarella cheese
    3 tbsp grated parmesan cheese
    1/4 cup fresh milk
    1 large onion - chopped
    3 whole eggs
    2 white eggs
    2 tbsp freshly chopped parsley
    2 tbsp chopped basil
    3 tbsp extra virgin olive oil
    Salt and pepper

    Method
    1. In a bowl, whisk all the eggs. And then add in all the ingredients; parsley , basil, grated cheese, onion, milk, zucchini, chopped beef bacon and mozzarella cheese. Season with salt and pepper. Set aside
    2. Heat olive oil, sauté the onion until translucent. Removed and add to eggs mixture.
    3. Using the same in a frying pan, add olive oil and spread the cooked spaghetti evenly. Cook for about 3 minutes without stirring it.
    4. Add the egg mixture on the spaghetti and allow to cook for another few minutes. Flip over to the other side and let it cook for another minute.
    5. Your spaghetti Fritatta is ready to be served.. Cheers







    Bahan
    2 cawan spaghetti yang telah di rebus
    Beberapa keping daging salai - di cincang
    1/2 cawan mozarella cheese - di potong 4 segi
    3 sudu makan keju parmesan yang diparut
    1/4 cawan susu segar
    1 biji bawang besar - di cincang
    5 biji telur ( 2 biji di ambil putih telur sahaja)
    2 sudu makan parsley yang di cincang
    3 sudu makan basil yang di cincang
    3 ssudu besar minyak bijan
    Garam dan lada hitam secukup rasa

    Cara membuatnya:
    1. Pecahkan 3 biji telur kedalam mangkuk, sementara 2 lagi di ambil putihnya sahaja. Masukkan parsley dan basil. Di pukul hingga sebati.
    2. Masukkan bahan-bahan yang lain; keju, susu, bawang, zucchini, daging dan di kacau. Masukkan garam dan lada hitam secukup rasa.
    3. Panaskan kuali leper, letakkan sedikit minyak bijan, gorengkan bawang sehingga wangi, di keluarkan dan campurkan kedalam telur
    4. Dengan menggunakan kuali yang sama, tambahkan minyak bijan dan masukkan spaghetti dan ratakan. Biarkan diatas api selama 3-5 minutes tanpa di kacau. Bila sudah sedikit garing, tuangkan bancuhan telur tadi. Biarkan is masak dengan api sederhana.
    5. Dengan menggunakan senduk leper yang lebar, alihkan spaghetti dengan berhati-hati. Biarkan masak hingga kuning.
    6. Angkat dan sedia di hidangkan

    Baked Spaghetti Cup


    I'm just being a bit creative... Lol.

    I have left over spaghetti, and to make it appealing and not to waste it. I put it in the muffin tray, add a bit of cream cheese and small piece of pineapple (from the can). And then sprinkle with grated cheese. And I bake it in the oven at 180 degree for about 15 minutes.




    And here it is Bake Spaghetti Cup...

    Special Spaghetti Meatball




    Ingredients
    1) Spaghetti
    1 packet spaghetti
    2 tbsp butter
    2 tbsp olive oil
    1 tbsp chopped parsley

    2) Sauce
    2 tbsp olive oil
    1 can tomato paste
    1 large yellow onion - cubed
    1 small capsicum - cubed
    1/2 can pineapple - cubed
    1/4 cup water
    4 pcs basil leaves
    1 tsp Italian herbs
    1/2 cup grated cheese
    Salt to taste

    3) Meatballs 
    1/2 kg minced beef
    1 cup bread crumbs
    2 eggs
    1 cup grated Parmesan cheese
    3 cloves garlic - finely chopped
    1/4 cup parsley - finely chopped
    Salt and pepper to taste

    Method
    Preparing Spaghetti
    1. Boil spaghetti until cooked. Removed and drain the water. Transfer to a bowl
    2. Add butter, olive oil and parsley. Mixed thoroughly. Set aside

    Preparing Meatballs
    1. Soak the bread in the water. Squeeze gently and drain the water. Transfer into a large bowl
    2. Add in minced beef, egg, cheese, garlic, parsley, salt and pepper. Stir until it well mixed. Shape it into a small balls
    3. Heat oil in a wok. Fry the meatballs in batches until brown (about 8-10 minutes). Removed and set aside

    Preparing the sauce
    1.  Heat olive oil in the sauce pan, sauté the onion until soft. Add in capsicum and basil
    2. Add tomato paste and Italian herbs. Add in the water and season with salt and pepper
    3. Add the pineapple and meatballs into the sauce. Simmer for about 10 minutes
    4. Finally add grated cheese and its ready to served

    Wonton Noodles with Braised Mushroom

    This is a Chinese dish, its simple but may take longer time... Well; it's easy when you organized or pre plan much earlier. For instance peel the onion and garlic and keep in the fridge when you are free or blend the chili or ect. By doing this it cut a lot of time and your meal can be ready within half an hour.

    To cook this noodles you need to soak the mushroom overnight. You can make extra , keep in the freezer and heat it when ever you need it.



    INGREDIENTS
    150gm dried mushroom (washed and soaked overnight in a boiled water)
    3 tbsp groundnut oil
    3 cloves garlic - finely chopped
    3 slices ginger - minced
    1 stalk spring onion- washed and tie into bundle
    2 tbsp Chinese cooking wine - (for non alcoholic -replace with Apple juice or white grape juice)
    1 tbsp dark soy sauce
    1 tbsp sugar
    2 tbsp corn flour (combine with 2 tbsp water)

    4 bundles fresh wantan noodles  )
    100gm Pak Choy (Sawi)            ) parboiled
    2 crab sticks - cut
    for garnishing - fried shalot

    For the Sauce
    2 tbsp sesame oil
    2 tbsp oyster sauce
    1 tsp sugar

    METHODS
    1. Drain and squeeze the mushroom, remove the stalk. Keep about 2.5l of it's stock
    2. Heat the groundnut oil, saute the onion, garlic until fragrant. Add the mushroom, oyster sauce, chinese cooking wine and dark soy sauce. Pour in the mushroom stock, cover with the lid and bring to boil, and let it simmer at the medium heat for about 1-2 hours until it tender
    3. Add sugar and increase the heat, allowed it to boil to reduce the liquid by hald (at least about 30 mins). Thicken the sauce by adding the corn starch. Removed
    4. Boil water in a pot and blanch the noodles after you loosen it. Cook for 2 mins and removed and soaked in a cold water to removed the starch.
    5. Combine the sauce ingredients and toss thoroughly with the noodles until well coated. Put it into a bowl and served with the mushroom, crab stick, pak choy and fried shalot

    Sizzling noodles

    For this recipe you can either use any instant noodle or normal yellow noodles etc.


    Ingredients
    1 small bowl noodles
    1 egg
    few pieces of chicken fillet - cut
    4 pcs dried mushroom - soaked & cut
    1 stalk Pak Choy (Sawi) - cut
    3 garlice - minced
    1/2" ginger - minced

    For the Sauce - Combine into a bowl
    2 tbsp Oyster Sauce
    1 tbsp light soy sauce
    1 tbsp sesame oil
    1 tbsp dark soy sauce
    1 tsp fresh ground black pepper
    1 tbsp corn flour

    Hot (sizzling) plate

    Method
    1. Heat 1 tbsp oil in a wok, saute garlic and ginger until fragrant.
    2. Add the chicken and mushroom, stir for few minutes and then add the sauce. Allow to cooked for about 3 minutes and remove from the heat. Set a side
    3. Heat up the hot plate, add the noodles and pak choy (sawi), pour the sauce and break the egg in.
    4. Sprinkle with pepper and served with cut chili

    Black Pepper Udon Noodles


    When cooking any type of noodles noodles, the ingredients is just up to your taste. In this recipes I use whatever I can find in my fridge at that moment. You can use prawn, squid, chicken meat, fishcake or  fish fillet. The beauty of this recipe is the black pepper so make sure it's freshly grounded.


    Ingredients
    1 packet Udon noodle (200g)
    3 garlic - chopped
    few pieces fish ball
    50g beef or chicken meat - cut

    Sauce Ingredients
    1 tbsp black pepper sauce
    1 tsp light soy sauce
    1 tsp Teriyaki sauce
    1 tsp dark soy sauce
    1 tsp white vinegar
    1 tsp freshly ground black pepper

    Carrot, Pak Choy (sawi), mushroom, Cauliflower etc

    Preparation
    1. Heat 1 tbsp oil, sauté the garlic until brown and then add beef or chicken meat. Stir for few minutes and then add fish ball and mushrooms
    2. Add carrot, udon noodles and all the sauce ingredients. Continue stirs for about 5 minutes
    3. Add other vegetables, give a quick stir and removed the dish
    4. Served while still hot

    Maggi Mee Goreng

    Fried Instant Noodles is quite popular among young adults. Most of Mamak restaurant selling this but it's very simple without much ingredients unlike mine. It is easy to make because you can get the ingredients easily and it's cheap.

    Ingredients
    1 packet Maggi mee
    1/2 tsp chili paste (optional)
    2 garlic - chopped
    1 egg
    A handful bean sprout
    Few pieces prawn
    1 tsp chili sauce
    1/2 tsp soy sauce
    1/2 packet Maggi instant ingredients
    A dash of pepper


    Method
    1. Soaked Maggi Mee with hot water for about 2 minutes. Removed and drain
    2. Heat 1 tbsp oil, and fried prawn for few second and then add the garlic. Stir until brown
    3. Add chili paste, egg and instant Maggi ingredients, chili & soy sauce and pepper.
    4. Add the noodles and bean sprout. Stir fried for about 3 minutes. Dish out and served

    Baked Fusilli Cheese

    I just wanted to try something different with this pasta. As usual I like it spicy... and it turns out excellent.... its so easy!




    Ingredients
    8 oz fusilli (spiral pasta)
    1/2 cup minced chicken
    3 tbsp butter
    4 pieces dried mushroom - soaked and sliced
    1 onion - minced
    2 tbsp flour
    1 cup cream cheese
    2 cup fresh milk
    1/2 tsp mustard
    1/2 tsp salt
    1 tsp ground black pepper
    few pieces basil leaves
    1 tomato - sliced
    1 tbsp roasted dried chili flakes
    2 cups grated cheese


    Methods
    1. Boil the pasta until cooked; drain and set aside
    2. Pre heat the oven to 180 C
    3. Melt butter in a sauce pan, fry the onion. And the add the minced chicken. Stir fry until chicken is cooked. Add the mushroom and continue stirs
    4. Add the flour and stirs. Slowly add milk and cream cheese. Add in the basil leaves and season with salt and black pepper.
    5. Combine the pasta into the mixture. Mixed thoroughly. Transfer into the baking tray. Arrange the tomatoes on top of it and cover with grated cheese. Sprinkle the chill flake and bake it for about 25 minutes
    6. Served while still hot

    Tom Yum Noodles





    Ingredients
    1 (500g) packet Mee
    4 pieces chicken fillet - cut
    1 bowl prawn - peeled and deveined
    1/2 cup Oyster mushroom - sliced
    2 tomatoes - cut
    2 lemongrass - crushed
    1" galangal - pounded
    1 large onion - cut
    3-4 pieces birds eye chili - minced (depending on your desire)
    4 pieces kafir leaves
    1/2 cup full cream milk
    3 tbsp heavy cream
    1 tsp chicken stok (powder/ granules)
    3 cups water
    1 tbsp fish sauce
    4 tbsp lime juice
    2 tbsp Tom Yum paste
    Salt to taste


    Method
    1. Heat oil in a pot, sauté garlic, onion and ginger until fragrant. Add lemongrass, kaffir leaves and galangal. Followed by chicken. Stir fry for 3 minutes.
    2. Add mushroom, tomatoes water and season with fish sauce and lime juice. Add prawn and simmer for about 10 minutes.
    3. Add the milk and switch off the heat.
    4. Boiled water and blanch the noodles. Dish out and served with gravy.

    Vegetarian Fried Mee Hoon





    Ingredients
    1/2 packet of dried mee hoon - soak with hot water unit soft and drained
    1 bunch Pak Choy (Sawi) - cut
    1 bowl bean sprout
    3 pieces Tofu - cut and fried
    1 cup - fresh button mushroom - sliced
    2 garlic - chopped

    Chili Paste (blend)
    2 pieces red chili - deseeded
    4-5 pieces dried chili
    1 garlic
    2 onions

    Sauce (combine in a bowl)
    1 tbsp Thai sweet chili sauce
    1 tbsp tomato sauce
    1 tbsp dark soy sauce
    1 tsp white vinegar
    1 tsp sesame oil
    Salt to taste


    Preparation
    1. Heat about 2 tbsp oil in a wok, sauté the chopped garlic until fragrant and then add the tofu and mushroom. Add the chill paste, stir fries until fragrant
    2. Add the sauce followed by mee hoon. Stir for about 10 minutes until it cooked and mixed properly
    3. Add the pan choy and bean sprout. Continue fry for 2-3 minutes but do not over cooked the vegetables.
    4. Garnish with spring onion and cut chill and served

    Spaghetti Bolognese





    Ingredients
    1 pack spaghetti - Boiled
    2 tbsp soften butter
    1 tbsp olive oil
    Parsley - chopped

    Sauce Ingredients
    1 can tomato paste
    100g minced beef
    200g beef - cut into small pieces
    2 onion - chopped
    2 garlic - chopped
    1 tbsp paprika
    1 tbsp mixed italian herbs
    1 tsp black pepper
    1 tbsp worcester sauce
    1/2 can pineapple with the juice (cut into small pieces)
    Grated cheese cheddar
    olive oil
    Salt to taste

    Preparations
    1. Boiled the water with salt and the olive oil. And then add spaghetti, continue boiled until cooked. Removed, while it's still hot mixed with 2 tbsp butter and chopped parsley and mixed thoroughly and set aside.
    2. Melt 2 tbsp butter in a pot, saute the garlic and onion until fragrant. And then add both cut beef. Stir until beef tender. Then adad the minced beef, stir for another 5 minutes
    3. Combine the tomato juice, let it simmer. Add Italian herbs, black pepper, olive oil, worcester sauce, paprika and pineapple with it's juice (1/2 can) . Cooked until it's bubbling.
    4. Add grated cheese and salt to taste.
    5. Garnish with parmesan cheese and parsley and served while still hot.

    Ipoh Kuay Teow


    If you are from Ipoh, Perak, you will know about this dish, in fact you can tell which restaurant or stall selling the best Kuay Teow soup. There are many other ways of making the dish. This the way that I used to cook , as it's suits to taste.





    Ingredients
    1 packet (500g) Kuay Teow (white flat noodles)
    2 pcs chicken breast
    1 bowl bean sprout
    Fish ball or fish cakes
    1 bunch chinese chives
    1 stalk spring onion
    1/2 tsp sesame oil
    1 tsp cooking oil
    1 tsp soy sauce
    1/2 tsp pepper
    3 cloves garlic - chopped
    1 bowl (300g)  Prawn
    2 cups chicken broth
    Salt to taste

    Methods
    1. Rub the chicken with sesame oil, pepper and cooking oil. Merinade for 10-20 minutes.
    2. Steam the chicken until cooked, removed and let it cold before shredd or cut the meat
    3. Heat 1 tbsp oil, saute the garlic until brown and then add prawn and chicken broth.Bring to boil. Season with soy sauce and pepper.
    4. Remove the prawn and peel the skin. Keep the head and shell
