SWEET DINNER ROLLS






Ingredients
4 cups bread flour
1 packet Instant yeast (1/4 oz)
1/3 cup of sugar
1 tsp salt
1cup of milk
1/3 cup unsalted butter
3 eggs yolks

Preparation:
1. Heat up milk and butter, just to melt the butter. (about 100 degree). Transfer into the mixer bowl and then sprinkle yeast in it then allow it to sit for about 5 minutes
2. Once the yeast mixture starts to bubbles, add flour, sugar, egg and salt, mixed from low to high until the flour mixed thoroughly. Increase the speed until dough if formed.
3. Transfer the dough into a flat surface, starts knead with your hand for about 5 minutes. Then transfer into the bowl (lightly greased with oil). Grease the top of the dough and then cover with plastic wrap. Allow it to rice into double. Roughly about an hour.
4. Cut the dough into 12 pieces, and then roll to make into long strip (12"), tie it into knot. Grease the baking tray and arrange the dough in it. Cover with kitchen tower and allow to rest for another 15 minutes.
5. Meanwhile heat up the oven to 180 degrees C, bake for about 20 - 25 minutes until it turns brown.
6. Brush with melted butter immediately after take out from the oven.

Soft Sweet Dinner Rolls





Ingredients: 

3 1/2  cup bread flour or all purpose flour
1 cup warm water
1/4 cup sugar
1 tbsp instant yeast
1 tsp salt
3/4 cup water
2/3 cup milk
4 tbsp butter
1 1/2 tsp lemon juice

Preparation:-
1.  Preheat the oven to 180 degrees.
2. Add flour, sugar , yeast and salt into electric mixing bowl. 
3. Melt butter with water and milk. But do not bring it to boil. You may use the microwave oven for about 1 minute. Stir the butter until it dissolve
4. Add into the flour and together with lemon juice. Mixed it for about 5 minutes from low to high speed.
5. Remove from the bowl and knead and shape it into round dough. Brush oil on top of it and then cover with plastic and allow it to rest for about 1 hour until double the size.
6. Punch the dough and knead again. Cut the dough into 9 pieces and then shape the dough into small balls and placed it on the baking tray (make sure oil it first)
7. Cover with towel and allow it to rise again for about another 30 minutes.
8.  Bake into the oven until it turn brown. 
9. Remove from the oven and then brush melted butter on it. Allow to cool before serve.




Potato Salad




Ingredients

3 medium size potato - peeled
1 1/2 cups mayonnaise
1 tbsp white vinegar
1 tbsp yellow mustard
1 tsp salt
1 stalk celery - diced
1 small yellow onion - chopped
2 hard-boiled egg - cut or diced
Pepper and salt to taste


Preparations:

1. Boil peeled potato until cook but not too soft. Drain and allow to cool. Diced the potato and set aside

2. In a large bowl, mixed all other ingredient accept the boil egg. Season to your taste.

3. Add potato and mixed well, you may add the egg and stir together with the potato or just place it on top when serving.

Papaya Pickle (Jeruk Betik)

I plucked the papaya from the garden, its really a lot as I tried to save it from the squirrel.  A friend of mine suggested that I make pickle out of it. I had never make this before and yeah.. why not give it a try. It turns out really nice.. and now I'm sharing it with others. Cheers everyone!

Jeruk Betik

Ingredients
1 almost ripe papaya - Peeled and sliced
1 tbsp salt
1 cup vinegar
1 cup water
1 1/2 cup rock sugar
6 birds eye chili

Method
1. Peeled and cut the papaya about 1" thick. Wash and add with salt. Rub thoroughly and marinade for about 1 hour.
2. Add in water, vinegar and sugar in a small pot. Boil until it dissolved and leave to cool.
3. Drain the papaya and arrange it in the glass jar with the chili. Pour the rolled vinegar syrup and marinade again for another 4-5 hours.
4. Store in the fridge before served.

Spicy Rosemary Baked Potato

Snacks for everyone... enjoy!!
Spicy Rosemary Baked Potatoes


Ingredients
4-5 pcs potatoes
4 cloves garlic - chopped
2 tbsp Olive Oil
2 Rosemary sprigs - chopped
1 tsp garlic powder
Freshly ground black pepper
1 tsp paprika powder (optional)
Salt to taste

Methods
1. Wash/ scrub the potatoes and cut into wedges. Drain and set aside
2. Arrange the potatoes into a plate and put it the microwave for about 5 minutes. (This process is to make it more crispy after baking)
3. Using the ziplock bag, add chopped garlic, pepper, olive oil, paprika , rosemary & salt. Mix it well
4. Add the potatoes and toss it thoroughly.
5. Transfer to the baking tray and bake in the oven for about 30 minutes or until its turn brown and crispy








Bahan-bahan
4-5 biji kentang - di potong wedges
4 ulas bawang putih - di hiris
2 sudu makan minyak bijan
2 tangkai rosemary - di cincang
1 sudu teh serbuk bawang putih
1 sudu serbuk cili (paprika)
1 sudu teh lada hitam
Garam secukup rasa

Cara membuatnya
1. Bersihkan kentang dan di potong wedges. Di toskan, susukankan kedalam pinggan dan masukkan ke dalam microwave untuk selama 3 minute.
2. Sementara itu, masukkan bawang puting yang telah dihiri ke dalam ziplock bag, masukkan minyak bijan serbuk bawang putih, rosmary yang telah di cincang, serbuk cili , lada hitam dan garam secukup rasa. Gaul rata
3. asukkan kentang ke dalam plastik bag dan di tutup. Goncangkan sehingga ianya rata . Biarkan selama 10 minit.
4. Panaskan oven pada 250 degree Celcius. Alaskan dulang pembakar dengan aluminium foil yang telah disapukan sedikit minyak. Panaskan di dalam oven selama 5 minit
5. Keluarkan dulang dan tuangkan kentang keatas dulang pembakar. Masukkan semula kedalam oven, bakar selama 15 minit. Keluarkan dan alihkan kentang dan bakar lagi selama 15 minit
6. Keluarkan dari oven dan ia sedia untuk di makan

Buffalo Chicken Wrap



Buffalo wing Chicken Wrap

Ingredients
2 pcs boneless chicken breast
1 packet Buffalo wings marinade
Shredded lettuce
1 tomato - diced
1 carrot - shredded

Dressing
BBQ Hot sauce (or Chili sauce)
Sour Cream
Grated Cheese

Method
1. Marinade the chicken with Buffalo wings ingredients. At least 2-3 hours. And then grilled the chicken in the oven or just pan grilled.
2. Once the chicken ready and cold, cut the chicken into small cube. Heat up the wrap in the microwave for about 2-3 minutes.
3. Add all the vegetables and chicken in the wrap. add the season and starts roll it up.
4. Enjoy

Egg in Capsicum



Simple breakfast but appetizing when you prepare this way.

Ingredient
2 eggs
1 green capsicum - Sliced round
1 tomato - cut
Dried parsely
Salt and pepper
Olive oil

Method.
1. Heat love oil in the frying pan. Add capsicum, turn it over few time
2. Break the egg in th capsicum, season with black pepper, parsley and salt
3. Add the same time cook the tomato just for 1-2 minutes
4. And... breakfast is ready!

Vegetables Frittata

Healthy breakfast for everyone.. I like it spicy. Its up to you to use any type of vegetables or not to put the chili. I pick whatever vegetables that I have in the fridge... In this recipe I used long beans. So have fun cooking everyone!!


Vegetables Frittata


Ingredients
5 pcs button mushroom -sliced
1/2 capsicum - diced
1 celery stick - diced
1 Zuchini ( or type of vegetables)
2 cloves garlic - chopped
1 tsp chili flakes (optional)
2 tbsp olive oil

4 eggs
1/2 cup fresh milk
1/2 cup grated cheese
salt and pepper to taste

Methods
1. Break eggs and whisk with milk, season with salt and pepper. Set a side
2. In a saucepan, heat up olive oil and sauté the garlic and then add the vegetables. Stirs until it cooked, season with chili flakes, salt and pepper
3. Add milk evenly, reduced the heat. Cook for about 5 minutes. Removed from the stove. Sprinkle the grated cheese and transfer to oven (top burner) until it turns brown
4. Served

Cheese Omelet




Ingredients
2 eggs
2 cherry tomatoes - diced
1 onion - diced
2 tbsp grated cheese
Salt and pepper to taste


Method
1. Break the eggs and add all the ingredients.
2. Heat up 1 tsp olive oil, and fried the egg.
3. Served

Mushroom Soup


Another soup recipe to start your day ....






Ingredients
3 cups chicken broth
4 potatoes - peeled and diced
10 - 15 pcs button mushroom - sliced
1 medium onion - chopped
3 garlic - minced
Chopped parsley
1 tbsp butter
3 tbsp olive oil
1 tbsp freshly ground black pepper
1 tsp salt or to taste
Light Cream


Methods
1. Heat oil and butter in a pot, sauté garlic and onion until soft.
2. Add sliced mushroom and cooked for about 5 minutes on slow heat
3. Add parsley, cut potatoes and the chicken north. Season with salt and black pepper. Simmer until potatoes soft. Remove from the heat and allow to cool
4. Using the blender, blend the soup until smooth. And then pour it back into the pot and stirs on slow.
5. Add cream and served

Cream of Celery Soup


During my recent visit to Penang, I had lunch with a bowl of soup as a starter, suddenly I realize that I don't have many soup recipes in my blog. So.. I am now decided to include more of it and to start with; is this excellent creamy soup. Enjoy!!






Ingredients
1 large onion - cut into wedges
3 cloves garlic - peeled and chopped
1/2 cup butter - melted
1 bunch of celery stick - cut into small
1 potato - peeled and cut
1 cups of chicken broth
1/2 cup water
2 cups fresh milk
1/2 cup cream
2 pcs bay leaf
1 tbsp flour
1 sprig parsley
1/4 tsp cayenne pepper
1/4 tsp freshly ground black pepper
Salt to taste

Methods
1. In a saucepan, melt butter and saute the onion and garlic until brown. Add chicken broth and flour and constantly stirs until smooth.
2. Add in celery and potatoes, bay leaf. Simmer until the vegetables soft
3. Removed from the stove. Allow to cool for a while
4.  Transfer to blender or any food processor. Add in milk, parsley and cream, blend until smooth.
5. Transfer back to the pot and season with black pepper, cayenne pepper and salt simmer for another 2-3 minutes before served.

Creamy Mashed Potato


This is my style of making the mashed potato... creamy and yummy!! feel free to try



Ingredients
4 - 5 potatoes , peeled but don't cut it
1/2 cup melted butter
1 tbsp milk powder
1/2 cup heavy creme or fresh milk
1tsp freshly ground black pepper
1/2 tsp salt

Method
1. Boiled potatoes until cooked, removed and drain the water
2. Mashed the potato while its still hot, add all other ingredients and mixed well
4. Served as a side dish

Mushroom Cheese Bruschetta







Ingredients
4-5 thick sliced bread
5-6 pcs button mushrooms - sliced
1 large onions - diced
1 garlic - chopped
1/2 green capsicum - diced
1 tomatoes - diced
1/2 tsp dried oregano
1 tbsp butter
Parsley
Grated cheese
Fresh ground black pepper
Salt to taste

Method
1. Melt butter in a frying pan, saute garlic and onions. Stir fry until soft
2. Add in capsicum, mushrooms, tomato and then season with oregano, black pepper and salt - removed and set aside
3. Arrange the bread on the baking tray. Put the mushroom on the bread and top up/ cover with grated cheese. 
4. Bake it in the oven at 170 degree C for about 5-10 minutes or until the cheese is melted and brownish. Garnish with parsley and served

Rasaam Soup

 










Ingredients
5 cloves garlic - peeled and crushed
1 tsp cumin seeds
1 tsp black pepper corn
1 bowl tamarind extract
1/2 cup water
1/2 tsp coriander powder

1/4 tsp turmeric powder
5 pcs dried chili
1/2 tsp mustard seeds
1/2 fenugreek seeds
1 handful corrinder leaves
2 tomato - cut
1 stalk curry leaves


Methods
1. Using the stone mortar, lightly pound the cumin seed and black pepper corn. Add in garlic and crushed it with 1/2 of the coriander leaves.
2. Heat 1 tbsp oil in a pot, add mustard seed, fenugreek and dried chili.  Stirs and then add in the pounded item and curry leaves. Continue stirs until fragrant
3. Add turmeric and coriander powder, followed by tamarind extract and tomato. Season with salt and bring it to boil
4. Add the coriander leaves and served.



Egg breakfast cups






Ingredients
2 eggs
2 pcs wholemeal bread
2 pcs Turkey slice
1 slices cheese
Melted butter
Freshly ground black pepper
Salt to taste

Methods
1. Remove the bread crust. Using the roller pin, press the bread until thin.
2. Fold the bread into a small cup to fit into the muffin baking tray.
3.  Brush the melted butter on the bread, and arrange the turkey slice and cheese (see picture)
4. Break the eggs into each of the bread cup and season with salt and pepper
5. Grill for about 15 minutes at 180 degree C. (depending on your taste - shorter period if you like runny eggs)
6. Removed from the oven and fold it in the aluminium foil and allow to rest for another 5 minutes before served.

Sambal Belacan


This recipe is requested by a friend who loves to eat this..including my father; he must have this as an additional dish together with ulam (salad).


Ingredients
4 red chili - cut
4 birds eye chili
1 tsp roasted belacan (shrimps paste)
1/2 tsp tamarind paste - mixed with 2 tbsp water
1/2 tsp lime juice
Salt to taste

Methods
1. Combine red chili, birds eye chili in a stone mortar or in a mini chopper. Pound or blend until fine
2. Add tamarind and lime juice, mixed well and served with white rice and deep fried fish.

Grilled Tofu Fish Cake and Sweet Pumpkin



Ingredients
2 pckt tofu fish cake (about 6 pcs each pack)
1 large onion - diced
1 garlic - peeled and crushed
2 slices pumpkin - peeled and diced
1 tbsp butter
1/4 cup water
salt and pepper to taste

Method
1, Grilled the tofu until brown. Set aside
2. Melt butter in a frying pan. Saute the garlic and onion, add the pumpkin and water. Cooked until it soft and dry. Season with salt and pepper.
3. Placed the pumpkin the plate and the arrange the tofu on top. Served with sweet chilli sauce
 
 


Meatballs with Vegetables




Ingredients
500g minced beef
1 egg
2 garlic - minced
1 onion - minced
1/2 cup bread crumbs
1/2 tsp salt
1/4 tsp ground blackpepper

Vegetables
Caulifower or brocolli
French beans
1 tbsp butter
1 garlic - crushed

Ready made BBQ sauce

Methods
1. Combine all the ingredient and mixed well and form into meat ball.
2. Heat the frying pan with cooking oil (about 4 /5 tbsp). Fry the meatball on medium heat until brown for about 10 minutes.
3. Steam the vegetables until cook. Set aside. Melt butter in a pan, saute the garlic and onion until brown. Return the vegetables and meatball. Give it a quick stir and then remove
4. Served with BBQ sauce

Thai Style Corn Fritters (cucur jagung)




Ingredients
2 cobs sweet corn
1 stalk spring onions - finely chopped
2 tblsp finely chopped corriander stems or (celery)
2 cloves garlic - chopped
1 tblsp fresh green peppercorn
2 tblsp cornflour (all purpose flour)
1 tblsp soft brown sugar
2 eggs - lighly beaten
1 tblsp fish sauce (soy sauce)
3 tblsp butter
Oil for frying


Methods
1. Peel or sliced corn kennel from the cobs
2. Combine corn with all other ingredients. Mixed well
3. Heat oil in a frying pan. Scoop the mixture into the pan and cook until brown. Turn the pancake to cook on the other sides.
4. Served with Thai Chilli sauce

Hello Bloggers

Hi all
Any Malaysian mom will know that when it comes to food, our kids (and their friends!) will travel far, far away just to eat that "awesome Nasi Lemak" or will always wait impatiently for Raya so they could sink their teeth into Rendang, Ketupat and so on.

So I decided to create this blog to help anyone out there who is keen to learn various recipes and to expand their culinary skills. It has been my dream to create something like this, and thanks to the wonder of blogs, I am able to do so.

I dedicate this blog to my children, Farah & Farmin who are always more than happy to eat rather than to cook. Hopefully they will be able to cook their favorite dishes without my assistance.
